400g Riscossa Spaghetti
300g of sea urchin meat
1 clove garlic
Extra virgin olive oil
Prepare the meat of the sea urchin by pulling from the shells, being careful of the spines.
Fry to a golden brown the slightly crushed garlic and chili in a large pan with olive oil.
Drain the pasta 1-2 minutes before it is al dente and pour into the pan together with the stir fry.
Add some of the cooking water and then mix everything together.
Turn off the heat and season with the sea urchin rapidly joining the flavors.
Sprinkle all with chopped parsley.
